Taste tips:

Use Laxmi's garam masala to make it yummy and tempting.

Always use fresh coriander as it gives a delightful aroma.

Minced spices and herbs give more flavour as compared to sliced or chopped ones.

Overcooking destroys the taste and aroma of food and spices, so timing is everything!

Supremecy:

It is effortless to cook and only takes 10 minutes.

Easily available ingredients.

Affordable dish.

Best as an appetizer.

Can be eaten hot or cold

Suitable for high-tea as well.

It can be served with rice or roti/rotli too.

Rich source of proteins.

This short list of ingredients would be enough for this ambrosial dish. These affordable components are easily found in the market, ensuring their availability for everyone.

Ingredients

  • 4 cups water
  • 4 eggs
  • 1 tablespoon oil
  • 1/2 teaspoon fresh green chilli, minced
  • 1/4 teaspoon fresh garlic, minced
  • 1/4 teaspoon fresh ginger, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon turmeric powder

Directions

  1. Boil 4 cups of water in a medium-size saucepan. Add eggs and boil for 7 minutes. Carefully take out eggs and run them through cold water to cool them. Peel the eggs and make sure there is no piece of shell on them. Now cut the eggs in half lengthways and divide them into two pieces.

  2. Pour oil into a large frypan and heat it at medium heat. Add minced chilli, garlic, and ginger. Sprinkle salt and turmeric. Stir and cook the masala at the same medium heat to infuse the taste of spices in the masala. Heat must be medium as it constrains the masala from burning and give ingredients time to cook and add their flavour and aroma to the mixture.

  3. Place the eggs' yolk side on the masala and cook for three minutes. Flip the eggs' sides while cooking to cover all sides in the masala.

  4. Take out the eggs on a clean plate. Sprinkle hand-chopped fresh coriander on the eggs and serve.

After years of enjoying my mum's magical delicious spicy fries masala eggs, I have now decided to share with you this secret recipe! This recipe is simply boiled eggs sliced in half and then pan-fried and coated with exotic spices, topped off with freshly chopped coriander.

A quick and easy dish to take to a party, picnic or BBQ. Enjoyed hot or cold.
