Ingredients

4 cups water
4 eggs
1 tablespoon oil
1/2 teaspoon fresh green chilli, minced
1/4 teaspoon fresh garlic, minced
1/4 teaspoon fresh ginger, minced
1/4 teaspoon salt
1/4 teaspoon garam masala
1/4 teaspoon turmeric powder

Directions

Boil 4 cups of water in a medium-size saucepan. Add eggs and boil for 7 minutes. Carefully take out eggs and run them through cold water to cool them. Peel the eggs and make sure there is no piece of shell on them. Now cut the eggs in half lengthways and divide them into two pieces.
Pour oil into a large frypan and heat it at medium heat. Add minced chilli, garlic, and ginger. Sprinkle salt and turmeric. Stir and cook the masala at the same medium heat to infuse the taste of spices in the masala. Heat must be medium as it constrains the masala from burning and give ingredients time to cook and add their flavour and aroma to the mixture.
Place the eggs' yolk side on the masala and cook for three minutes. Flip the eggs' sides while cooking to cover all sides in the masala.
Take out the eggs on a clean plate. Sprinkle hand-chopped fresh coriander on the eggs and serve.
