Deep fried potato chips covered in a spicy batter. A great simple starter to have before a main meal that isn't too heavy. Best eaten hot from the wok.

Ingredients

  • 2 medium potatoes, washed, peeled and thinly sliced
  • 1/2 cup pea flour
  • 4 teaspoons rice flour
  • 1 teaspoon fresh green chilli, minced
  • 1/2 teaspoon fresh ginger, minced
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric powder
  • 1 cup cold water
  • 1 litre oil, for deep frying

Directions

  1. Wash, peel and thinly slice potatoes.

  2. For the batter, in a small bowl combine together pea flour, rice flour, chilli, ginger, salt, turmeric and water.

  3. In a wok, heat oil on a high heat. Dip sliced potatoes into batter mixture and carefully place into hot oil. Cook for 1-2 minutes or until golden brown. Drain on paper towels before serving. Serve hot with a chutney of your choice.
